Less than 2% of Americans achieve even the recommended minimum adequate intake of potassium, due primarily to inadequate plant food intake. We need 4,700 mg of potassium a day.
 
Here is the amount of potassium found in different plant- foods:
1 cup of cooked lentils= 731 mg
1 cup of cooked black beans= 611 mg
1 cup cubes of butternut squash= 582 mg
1 medium sweet potato (with the skin)= 542 mg
1 cup cubes of cantaloupe= 427 mg
1 medium banana= 422 mg
1 medium sweet potato (without the skin)= 347 mg
1 cup cooked quinoa= 318 mg
1 cup chopped zucchini= 324 mg
1 cup raw broccoli= 288mg
2 cups raw kale= 145.2 mg
2 cups raw collards= 153.4 mg
 
*Greens provide us with a double whammy--as they are rich in nitrates and a good source of potassium. Nitrates from green-leafy veggies are converted to nitric oxide in the body and potassium increases nitric oxide release. WHY FIBRE?

Fiber is found in whole, unrefined plant foods (such as beans, whole grains, fruits, and vegetables). While fruits and vegetables contain fiber, many of them are also made up of about 90% water. Therefore, the fiber superstars are legumes (beans, split peas, chickpeas, and lentils), as well as whole grains. This is one of the reasons legumes and whole grains are emphasized on the Daily Dozen checklist.
 
If you eat some whole grain barley for supper, by the next morning your good gut bacteria are having it for breakfast, releasing butyrate into our bloodstream—a compound that seems to exert broad anti-inflammatory activities, which could help explain why significant decreases in the prevalence of inflammation are associated with increasing dietary fiber intakes.  Fiber may also help improve cholesterol, immune function, blood sugar control, and more.

Crucial effects of FOODS on the nervous system

Foods are natural sources of substances that may exert crucial effects on the nervous system in humans. Some of these substances are the neurotransmitters (NTs) acetylcholine (ACh), the modified amino acids glutamate and γ-aminobutyric acid (GABA), and the biogenic amines dopamine, serotonin (5-HT), and histamine. 

In neuropsychiatry, progressive integration of dietary approaches in clinical routine made it necessary to discern the more about some of these dietary NTs.

 Relevant books and literature from PubMed and Scopus databases were searched for data on food sources of Ach, glutamate, GABA, dopamine, 5-HT, and histamine. Different animal foods, fruits, edible plants, roots, and botanicals were reported to contain NTs. These substances can either be naturally present, as part of essential metabolic processes and ecological interactions, or derive from controlled/uncontrolled food technology processes. Ripening time, methods of preservation and cooking, and microbial activity further contributes to NTs. Moreover, gut microbiota are considerable sources of NTs. 

Evidence-based interventions studies should be encouraged.
